What ingredients do you need to make Pumpkin Pie Overnight Oats
Rolled Oats — The main ingredient, holding all of your pumpkin pie breakfast dreams together.
Oat Milk — You can use any plant-based milk, but oat milk really makes these overnight oats extra creamy. Tip — Choose a plant-based milk that’s free from preservatives and binders like carrageenan. These added ingredients help keep the milk from separating, but they may also cause stomach upset over time. Look for a product like Earth’s Own Naked Oat Milk, made with just four ingredients!
Pumpkin Puree — The base of any pumpkin pie recipe, be sure to use pure pumpkin puree, not pumpkin pie filling. Pumpkin is a good source of carotene (vitamin A), potassium, fibre, and vitamin C, vitamin E, iron, and folate — what a great way to start your day!
Pumpkin Spice — The star of all things pumpkin pie!
Hemp Hearts — A wonderful whole food and plant-based source of protein that’s chock-full of fibre, omega3 and 6.
Chia Seeds — These little seeds pack a big punch with an abundance of vitamins and minerals. They’re also a good source of plant-based protein, fibre and omega3.
Vanilla Extract — Don’t skip the vanilla, it helps bring out the flavour of other ingredients.
Maple Syrup — Just a touch of natural vegan sweetness to really bring this pumpkin pie flavour home! Maple syrup is also high in antioxidants, zinc and manganese. Just be sure to buy REAL maple syrup from a reputable source, not high fructose corn syrup masquerading as maple syrup.
Creamy Pumpkin Pie Overnight Oats
Ingredients
The Oats
- 1/2 cup rolled oats
- 1/2 cup oat milk or other plant-based milk
- 2 tbsp pumpkin puree
- 1 tsp pumpkin spice
- 1 tbsp hemp hearts
- 1/2 tbsp chia seeds
- 1/4 tsp vanilla extract
- 1 tsp maple syrup
- Whipped coconut cream (optional)
Pumpkin Spice
- 1 tbsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp ground all-spice
- 1 tsp ground nutmeg
Instructions
- Add all ingredients to a high-speed blender and blend on high until creamy.
- Refridgerate overnight (or at least 4 hours) + enjoy for breakfast.
