Spooktacular Banana Ghost Pops

These Spooktacular Banana Ghost Pops are such a fun and healthy way to celebrate the spooky season. Perfect for a special Halloween breakfast or snack for the kiddos.

Ingredients
  

  • 2 bananas sliced into quarters
  • 1 cup nut butter I used Valencia peanut butter
  • 1 cup organic yogurt I used Yoggu vanilla
  • 1/2 tbsp organic coconut oil
  • 16 dark chocolate chips or organic raisins for eyes

Instructions
 

  • Cut bananas in half widthwise and then lengthwise.
  • Carefully stick popsicle sticks or twigs lengthwise into the quartered banana pieces. Place on a lined baking sheet and freeze for about 20-30 mins (or longer).
  • Warm the peanut butter and coconut oil over a double boiler or in the microwave, stir until smooth and runny.
  • Remove the frozen bananas from the freezer and gently dip each in the peanut butter mixture until coated. Place them back on the baking sheet and freeze for another 20-30 minutes.
  • Remove the bananas from the freezer, and carefully dip them into the yogurt until coated.
  • Place the dark chocolate chips or raisins eyes on the 'ghosts'. Freeze for at least another 20 minutes or until you're ready to serve and enjoy.
  • Store in a freezer-safe container.
