Spooktacular Banana Ghost Pops
These Spooktacular Banana Ghost Pops are such a fun and healthy way to celebrate the spooky season. Perfect for a special Halloween breakfast or snack for the kiddos.
- 2 bananas sliced into quarters
- 1 cup nut butter I used Valencia peanut butter
- 1 cup organic yogurt I used Yoggu vanilla
- 1/2 tbsp organic coconut oil
- 16 dark chocolate chips or organic raisins for eyes
Cut bananas in half widthwise and then lengthwise.
Carefully stick popsicle sticks or twigs lengthwise into the quartered banana pieces. Place on a lined baking sheet and freeze for about 20-30 mins (or longer).
Warm the peanut butter and coconut oil over a double boiler or in the microwave, stir until smooth and runny.
Remove the frozen bananas from the freezer and gently dip each in the peanut butter mixture until coated. Place them back on the baking sheet and freeze for another 20-30 minutes.
Remove the bananas from the freezer, and carefully dip them into the yogurt until coated.
Place the dark chocolate chips or raisins eyes on the 'ghosts'. Freeze for at least another 20 minutes or until you're ready to serve and enjoy.
Store in a freezer-safe container.
